Pomegranate and passion fruit margarita
For this delicious beverage, fresh pomegranate juice is best. However, you can also use POM drink. Freeze fresh juice or Pom in ice cube trays. For each glass, use 5 large or 10 small cubes of pom juice (add more for sweeter drink). Add ice to your glass. Top with Patron tequila (blanco one shot or half depending on how much alcohol you'd like to have), Cointreau 1/2 shot, lime juice (optional), pom juice and salt to rim glasses and one entire passion fruit (added last) to your glass.
Raspberry, lychee and mint mojito
For each glass, 2-3 lychees, 3 raspberries, 3 mint leaves and lime juice (1/2 lime per glass). Muddle all together and add some ice. Add 1oz of white rum. Then top your glass with soda water or ginger ale. Garnish with more lychee, raspberries and mint.
Mahasti's Maravilloso Mojito
Ingredients for 2 mojitos: 10-15 muddled mint leaves in 1-2 tbs sugar, add juice of 2 limes, ice cubes, 1ounce of white rum, club soda - mix well.

Hibiscus Margarita
Hibiscus simple syrup recipe: simmer 1 cup water, 1 cup sugar and 1 cup dried hibiscus flowers in a sauce pan. Stir until sugar melts. Allow to cool thoroughly.
For the Margarita, salt the rim of your glasses with lime juice and salt (I used violet salt). Add 5-6 ice cubes to glass, 1/4 cup hibiscus simple syrup, 1 large lime juice or 3 tbsp, 1 ounce silver tequila or more (4 tbs), 1 tbs agave nectar, 1 tbs Cointreau. I also added 1/4 cup of club soda / ginger ale to add a little fizziness. You can also mix all ingredients in cocktail shaker and pour into glass. I garnished the drink with hibiscus petals but you can also garnish with a slice of lime. At Ophelia, they serve with a slice of dehydrated lime.

Elderflower Spritz
For each glass, you will need:
2 oz St Germain Elderflower Liqueur, 3 oz Prosecco (La Marca is a good choice), 3 oz club soda, 2 thin slices of cucumber, mint for garnish. Pour liqueur over ice. Add Prosecco and club soda. Stir gently. Add cucumber and mint.

Lemon, cucumber, raspberries, blueberries, peach and basil infused water
French 75 cocktail
1 and 1/2 ounces gin
1/2 ounce elderflower liqueur (Saint Germain)
1/2 ounce lemon juice
2-4 ounces chilled Prosecco

Caipirinha brasiliera
- 1/2 shot glass of Cachaça
- 1 lime or lemon, cut into wedges
- 2 tsp of sugar
- crushed ice

For one person: 7-8 chunks of fresh pineapple, 1 teaspoon of granulated sugar, 1 tablespoon coconut cream, 50 ml of Bacardi White Rum, 50 ml of fresh pineapple juice, ice cubes. Mix all ingredients in a blender until mixture becomes slushy. Pour into a chilled sling glass and garnish with a piece of pineapple. ¡Salud!
Raspberry Frosé
I tried to recreate Cactus Club's Frosé using raspberries instead of strawberries.
Pour Rosé either in a pan or in ice cube trays and freeze till almost solid. Bring sugar and 1/2 cup water to a boil and stir till sugar dissolves. Add raspberries and let sit at least 30 minutes. Strain through a sieve to get out majority of seeds. Cover and chill for 30 minutes. Blend frozen rosé, vodka and berries. Enjoy!
- one bottle of rosé (Merlot or Pinot Noir rosé)
- 1/2 cup sugar (to make a syrup)
- 8 ounces fresh raspberries (you can use frozen but they are quite tart)
- fresh lemon juice
- Smirnoff raspberry vodka 1/4 cup - optional

Blood Orange Sangria
Ingredients:
- juice of 3 blood oranges
- 1/2 cup Pinot Grigio
- 1/4 cup Cointreau
- rim the glass with orange juice and sugar
Raspberry strawberry Rossini
- 1/2 pound fresh strawberries (hulled and sliced in half for easy blending) and 1/2 pound raspberries
- 1/2 tbs fraise and 1/2 tbs framboise liqueur - 1 tsp fresh lemon juice - 750 ml bottle of chilled Prosecco Puree the berries, sugar and liqueur, lemon juice. Strain the mixture. Pour into flutes and top with Prosecco. |
Peach Bellini
- Frozen peaches; fresh ripe ones are best if they are in season; use a peach per glass. You may need to add some sugar or simple syrup if the peaches are not as sweet.
- Peach juice 1/2 cup - Prosecco Blend the peaches and juice in blender, strain the puree, pour into glasses and top with Prosecco. |
Raspberry Mimosa
- 1 1/2 oz Framboise liqueur
- frozen raspberries - champagne or Prosecco - ice - raspberries to garnish Blend liqueur and frozen berries, pour into flutes, top with ice and chilled champagne/Prosecco, add fresh raspberries. |
Ambrosia
- Blue Curacao 1 1/2 oz
- Framboise liqueur or Triple Sec 1 1/2 oz - Raspberry Vodka 1 1/2 oz - 4 oz pineapple juice - ice In a shaker, mix all ingredients and pour into martini glass. Add fresh raspberries. |
